Baked Apple
Method
- Slice the top from the apple with a sharp knife and set aside
- Core the fruit and scoop out the flesh
- Chop the apple flesh and dried apricot before combining with the dried mixed fruit and mixed spice
- Spoon the mixture into the hollow apple and replace the top
- Wrap loosely in baking foil and cook slowly in a cool oven
- Serve with custard and a dusting of mixed spice or cinnamon
