Chocolate Cookies


Ingredients

  • 100g Soya marge
  • 100g Sugar
  • 150g Plain flour
  • 1tsp Vanilla essence
  • 2 tsp cocoa powder
  • 75g Dark cooking chocolate, smashed up in to chips!

Method

  1. Stir the cocoa powder into the sugar until evenly mixed, then cream in the soya marge.
  2. Add the vanilla essence and the chocolate pieces; mix well
  3. Mix in the flour until you achieve a soft dough (keep working at this, it can seem to take a while but it will 'stick' eventually)
  4. Divide into even balls (makes 16 regular or 8 giant cookies)
  5. Place on a baking sheet lined with greaseproof paper. Cook for 8 minutes.
  6. Allow to cool on a wire rack before removing from the paper.

Cooking Temperature: 200 degrees

Cooking Time: 8 Minutes

Serves: 8/16

Keeps For: Not very long in my house...

  • Makes a good Cherry and Chocolate Not-Cheesecake base!
  • See Not-Dairy for info on soya marge.
  • This also works well if you substitute the chocolate chips for dried fruit and nuts.
