Lime Pickle
Method
- Add the limes, salt, turmeric and vinegar to a sterile container and stir well
- Seal the container and set aside making a note of the date
- Stir the limes every couple of days for at least one month or longer until the limes are soft, resealing carefully
- Add the oil and remaining spices and mix well
- Store for a further week before serving

- Makes a good accompaniment to poppadoms but also goes well with Onion Bhajis and Samosas!
