Lime Pickle


Ingredients

  • 9 Limes, quartered
  • 2.5 tbsp Salt
  • 2 tsp Turmeric
  • 15 tbsp White wine vinegar
  • 150g Crushed mustard seeds
  • 40g Crushed fenugreek seeds
  • 5 tsp Chilli powder
  • 5 tsp Crushed flaked chilli
  • 150ml Vegetable oil

Method

  1. Add the limes, salt, turmeric and vinegar to a sterile container and stir well
  2. Seal the container and set aside making a note of the date
  3. Stir the limes every couple of days for at least one month or longer until the limes are soft, resealing carefully
  4. Add the oil and remaining spices and mix well
  5. Store for a further week before serving

Tips and Comments

  • Makes a good accompaniment to poppadoms but also goes well with Onion Bhajis and Samosas!
