Sausage Casserole
Method
- Prepare the butter beans as per instructions on packet (or use tinned ones!) and set aside
- Chop the sausages if preferred (can be left whole) and gently fry in an oven proof dish with the onions and garlic
- Add the canned and dried tomatoes, cider vinegar, red pepper and mushrooms
- Stir in the herbs and bring to the boil
- Cover and place in the oven for one hour (or longer if you have time for even more flavour!)
- Serve with a fresh salad or cooked vegetables; also very comforting with a big hunk of crusty bread!

Tips and Comments
- Quorn sausages are easy to find but not vegan (contain egg); Linda McCartney is 'safe' and just as readily available.
