Apple Crumble Icefu


Ingredients

For the Apple Crumble:

  • 1 Recipe of apple spread
  • 60g Crunchy cereal (granola or similar)

For the Icefu:

  • 500g Silken tofu
  • 200g Granulated sugar
  • 250g Plain soya yoghurt
  • 1 tsp Vanilla essence
  • 1 tsp Ground cinnamon
  • 1/2 tsp yellow food colour
Apple Crumble Icefu

Method

  1. Blend the tofu, sugar, soya yoghurt, vanilla essence, ground cinnamon and food colour until creamy
  2. Place in a suitable container and freeze
  3. Make the apple spread and allow to cool
  4. When ice crystals have started to form (1 - 2 hours depending on your freezer) blend the mixture again
  5. Repeat the freezing/blending process until the mixture is frozen but thick and creamy (3 times minimum seems to be about right)
  6. After blending for the final time, fold the apple spread and granola through the icefu; mix thoroughly or leave marbled if preferred
  7. Remove from the freezer about 20 minutes before serving (depending on how soft you like it)

Prep Time: About 40 minutes total

Serves: 6

Keeps For: As long as you can resist! (a good few months!)


Tips and Comments

  • Omit the food colouring if preferred but I like to make it look like custard; try adding sultanas and mixed peel too.
  • Serve with soya yoghurt or cream and an extra sprinkling of cinnamon for extra flavour!
