Mince Pies

For the Pastry:

Method
- Cut the soya marge into the flour and rub in until the texture resembles breadcrumbs
- Slowly add the cold water one spoon at a time and beat until a firm dough forms
- Cover the dough and place it in the 'fridge for 30 minutes or so
- When firmed, roll out 3/4 of the pastry on a floured surface and cut it into 12 circles that will fit your baking tin
- Spoon equal amounts of mincemeat into each case
- Roll out the remaining pastry and cut 12 (slightly smaller) lids
- Top each pie with a lid, prick it and brush with a small amount of soya milk
- Bake in a medium oven for 20 minutes or until golden brown
- Sprinkle with icing sugar and serve warm or set aside to cool

Tips and Comments
- Shop-bought mincemeat is often 'safe' but it's much more fun to make your own and really not so much of a chore!
