Method
- Soak and prepare the lentils as per instructions
- Place the chopped onion, garlic, canned tomatoes, spices and gravy granules in a large saucepan and heat gently
- Stir in the prepared lentils and dried soya mince
- When the mince has absorbed the liquid, add small amounts of boiling water until it is not at risk of sticking
- Stir in the remaining chopped vegetables and cook for a further 10 minutes
- Slice and core the marrow (into a bout 6 pieces) and place on a greased baking tray
- Fill each marrow slice with even amounts of the mince mixture
- Cook in the oven for 30 minutes or until the marrow is soft and browning
- Serve with rice or a fresh, crisp salad

- One of the first meals my mum learned to make when I became vegetarian aged 10! <3
- Experiment by adding other vegetables or try kidney beans and chilli instead of lentils for a winter-warming version
