Stuffed Marrow


Ingredients

  • 1 Marrow
  • 80g Dried green lentils
  • 50g Dried soya mince
  • 1 Medium onion
  • 4 Cloves garlic
  • 1 Can chopped tomatoes
  • 2 Medium carrots
  • 1 Stalk celery
  • 1 Red pepper
  • 4 Heaped tsp vegetable gravy granules
  • 1 tsp Dried rosemary
  • 1 tsp Dried sage
  • Rice to serve

Method

  1. Soak and prepare the lentils as per instructions
  2. Place the chopped onion, garlic, canned tomatoes, spices and gravy granules in a large saucepan and heat gently
  3. Stir in the prepared lentils and dried soya mince
  4. When the mince has absorbed the liquid, add small amounts of boiling water until it is not at risk of sticking
  5. Stir in the remaining chopped vegetables and cook for a further 10 minutes
  6. Slice and core the marrow (into a bout 6 pieces) and place on a greased baking tray
  7. Fill each marrow slice with even amounts of the mince mixture
  8. Cook in the oven for 30 minutes or until the marrow is soft and browning
  9. Serve with rice or a fresh, crisp salad

Cooking Temperature: Medium Hob/200 degrees

Cooking Time: 60 Minutes

Tips and Comments

  • One of the first meals my mum learned to make when I became vegetarian aged 10! <3
  • Experiment by adding other vegetables or try kidney beans and chilli instead of lentils for a winter-warming version
