Banchocado
Method
- Roughly chop the avocado and banana (Try to keep the avocado skin in two half shells if you wish to use them for serving)
- Place all the ingredients except the blueberries, coconut and garnish in a blender and pulse/blend until smooth
- Scoop the mixture into bowls (or the avocado skins) and chill
- Serve with the coconut flakes, fresh blueberries and a sprinkling of cinnamon

Tips and Comments
I love it when a plan comes together but I love it even more when the plan goes out of the window and serendipity takes over. I was sent a recipe to try and fiddled with it until I got this version; I was then linked to it in its original form. Funnily enough though it was apparently an accident, the original plan involved banana which I instinctively added back in! You can of course use any fruits, or none but I happen to think blueberries work especially well. A frozen version also goes down a treat!
