Strawberry Shortcake Biscuits

Method
- Cream the marge and sugar until well mixed
- Stir in the flour and vanilla essence until you form a light dough
- Turn out onto a floured surface and roll out; cut the shapes you require, an even number for tops and bottoms
- Briefly bake in a cool oven
- When cool, spread a spoon of strawberry jam on to each base before sticking the top on

Tips and Comments
- These look great if you have the tools to punch shapes from the tops but are just as nice in a less fussy fashion!
- If you are in a rush it is perfectly acceptable to use shop-bought jam! Try other flavours too (but strawberry is a classic with shortcake!)
