Method
- Chop and boil the potatoes (be careful not to over cook them!) then set them aside to cool
- Add the remaining ingredients to a bowl and mix well
- Pour the dressing over the potatoes and chill

Tips and Comments
- You can of course use any fresh herbs but I do find this blend especially good for summer spuds!
- Use dairy free mayonnaise instead of vinegar if you prefer a creamy potato salad.
- Add chopped spring onions if liked, though too much will overwhelm the herbs.
