Nomelette


Ingredients

  • 200g Silken tofu
  • 10g Soya marge
  • 3 large mushrooms
  • 1/4 yellow pepper
  • 1/4 red pepper
  • 1/2 tsp dried chilli flakes
  • 2 tsp veg bouillion powder
  • 1 tbsp chopped parsley

To Serve

  • 2 slices of granary bread
  • salad as preferred
  • Salt and pepper to taste

Method

  1. Melt the soya marge in a pan
  2. Add the chopped peppers and mushrooms and cook until they start to sweat a bit
  3. Stir in the silken tofu, bouillion and chilli flakes and cook further for up to 5 minutes, stirring continuously
  4. Stick in the chopped parsley and cook for another minute
  5. Serve on the toasted granary bread with a side salad and seasoning to taste

Cooking Time: 15 minutes

Tips and Comments

  • This makes a good quick lunch!
  • Silken tofu can be bought from larger health food shops and Chinese supermarkets. (See Not-Eggs)
  • You could happily use firm tofu if needed but it wouldn't have quite the same texture.
  • Experiment with different vegetables and serve with baked beans for a breakfast option.
