Method
- Carefully wash the nettle leaves and soak them in warm water for 10 - 15 minutes
- Gently sauté the onion and add the vegetable stock, finely chopped celery and nettle leaves
- Simmer for 10 minutes and add the lemon juice and seasoning
- Blend the softened mixture until the desired texture is achieved
- Serve with a swirl of soya yoghurt and a sprinkling of paprika

Tips and Comments
- Nettle leaves should be harvested in the spring; before the middle of June and before they have become too hairy.
- Always handle them with gloves when picking, washing and until cooked.
