Nettle Soup


Ingredients

  • 200g Young nettle leaves
  • 1 Large onion
  • 1 Pint vegetable stick
  • 2 Celery stalks
  • Juice of 1 lemon
  • Salt, pepper and paprika to taste

Method

  1. Carefully wash the nettle leaves and soak them in warm water for 10 - 15 minutes
  2. Gently sauté the onion and add the vegetable stock, finely chopped celery and nettle leaves
  3. Simmer for 10 minutes and add the lemon juice and seasoning
  4. Blend the softened mixture until the desired texture is achieved
  5. Serve with a swirl of soya yoghurt and a sprinkling of paprika

Cooking Temperature: Medium hob

Cooking Time: 10-15 Minutes

Serves: 2

Keeps For: 3 days


Tips and Comments

  • Nettle leaves should be harvested in the spring; before the middle of June and before they have become too hairy.
  • Always handle them with gloves when picking, washing and until cooked.
