Spiced Pear Slices


Ingredients

  • 225g Plain flour
  • 50g Soya marge
  • 150ml Soya milk
  • 2 tsp Baking powder
  • 100g Sugar
  • 1/2 tsp Salt
  • 1 tbsp Cider vinegar
  • 2 tsp Lemon juice
  • 2 tsp Vanilla essence
  • 1 medium pear
  • 2 tsp Mixed Spice
  • 1/4 portion of Mincemeat
Spiced Pear Slices

Method

  1. Mix the flour, baking powder and 1 tsp of mixed spice before setting aside
  2. Melt the soya marge and blend with the sugar, cider vinegar, soya milk, lemon juice and vanilla essence
  3. Gently fold the liquid into the flour, avoiding over-blending or interrupting the rising action of the vinegar with the baking powder
  4. Transfer 1/2 the cake mix to a greased, lined, baking tin and spread the mincemeat on the top of the batter
  5. carefully spread the remaining cake mix on top and press slices of pear into it before dusting with the remaining mixed spice
  6. Cook at 175 degrees for 20 minutes or until a skewer comes out of the middle clean
  7. Allow to cool before cutting it in to slices

Cooking Temperature: 175 degrees

Cooking Time: 20 Minutes

Serves: 12

Keeps For: 3 days
