Spiced Pear Slices

Method
- Mix the flour, baking powder and 1 tsp of mixed spice before setting aside
- Melt the soya marge and blend with the sugar, cider vinegar, soya milk, lemon juice and vanilla essence
- Gently fold the liquid into the flour, avoiding over-blending or interrupting the rising action of the vinegar with the baking powder
- Transfer 1/2 the cake mix to a greased, lined, baking tin and spread the mincemeat on the top of the batter
- carefully spread the remaining cake mix on top and press slices of pear into it before dusting with the remaining mixed spice
- Cook at 175 degrees for 20 minutes or until a skewer comes out of the middle clean
- Allow to cool before cutting it in to slices
