Crumpets
Method
- Mix the yeast with the sugar and 75ml of the warm water, allowing it then to rest for around 10 minutes until it is frothy
- Stir the baking powder and salt into the flour and blend well
- Add the frothy yeast with the remaining water to the flour mix and beat until smooth
- Allow the mix to rise for 45 minutes
- Cook for 10-15 minutes in greased poaching rings in a frying pan over a hot hob, turning at least once
- Serve warm immediately, or toasted/grilled the next day

Tips and Comments
- Be careful not to spread the dough too thick or they will burn on the outside before cooking in the middle!
- Go very well with Apple Spread, Lemon Curd or Strawberry Jam!
- These can be made in advance and even frozen.
