Method
- Add a little of the almond milk to the corn flour and stir to form a smooth paste
- Add all the ingredients (except the lemon juice) to a saucepan and bring to a simmer on a medium heat, stirring continuously
- When the mixture has thickened, remove from the heat and continue to stir whilst adding the lemon juice
- Pour into shaped silicone muffin cases and allow to cool further
- Chill for two hours before turning out of the cases and serving with fresh fruit

Tips and Comments
- Be careful not to add the lemon juice until the mixture has thickened or you may curdle the milk.
- These can of course be made into any shape... but I think stars suit them well!
